18 Nebraskaland • November 2024 IN THE FIELD The CanCooker offers an easy way to cook nourishing meals in the duck blind. JEFF KURRUS, NEBRASKALAND By Todd Mills DUCK CANCOOKER I was first introduced to using the CanCooker in a duck blind by my good friend, Trevor Johnson. Although I'd had one at home for a while, I never thought of using it outside the house. After that day, the duck blind CanCooker became a staple in my boat and on hunting trips. As an added plus, it can be used on almost any heat source. Whether you're camping, hunting or just looking for a quick meal with easy clean up, using this method is about as easy as it gets. Below is my favorite CanCooker recipe. Servings: 4 Ingredients: • 4 links duck sausage cut up into small chunks (or substitute your favorite sausage) • Carrots, broccoli and celery cut into cubes, to taste • 4 small white potatoes cut or sliced into cubes • Approximately 2 cups wild rice • 12 oz. liquid, such as stock, dark lager beer or pop (I prefer Dr. Pepper.) • Seasonings, such as Lawry's Seasoned Salt Spray the inside of the CanCooker with cooking spray. Add liquid first, and then put in vegetables with potatoes and rice. Meat goes in last, on top of the vegetables. Add Lawry's or other seasonings at the end. Close the CanCooker, put on medium heat and wait for steam to start coming out of the top. When you see steam, slightly turn down heat and cook for 45 more minutes. Prepare the can and ingredients the night before and store in the fridge so it's ready to go without any morning prep. Clean-up is easy and fast, another plus if you're looking for convenience, which we usually are in the duck blind. Feel free to substitute ingredients. The CanCooker is versatile, and you can experiment with various protein and carbohydrate choices. There's nothing like it in the duck blind.
